The recipe makes 18 muffins (fill muffin cups around 1/2 - 2/3 full) or four mini loaves.
Today, we brought these to school for my son's birthday snack (we left out the nuts) and the kids loved them.
Ingredients:
3/4 cup organic granulated sugar
1/3 cup canola oil
2 eggs
2-3 large bananas
3/4 cup organic whole wheat flour
3/4 cup organic all purpose flour
1/2 tsp ground nutmeg
1/2 tsp ground cinnamon
1/2 tsp pure vanilla extract
3/4 tsp baking soda
1/2 tsp salt
1/2 cup chopped walnuts
Directions:
- Heat oven to 350 degrees F.
- Beat sugar, oil and eggs. Mash bananas until they are lumpy. Stir in bananas, nutmeg, cinnamon, vanilla.
- Stir in baking soda and salt until combined, then quickly follow with the whole wheat and all purpose flour. Again, stir until combined.
- Fold in the nuts.
- Pour into 4 greased mini loaf pans or muffin pan. Cook until golden brown and there is a bit of spring when you press on the top. For muffins, that's usually about 15 minutes (but watch carefully). For the mini loaves, check after about 20 minutes. As with all cooking, pulling food out of the oven before it dries out is key!
Enjoy!

i will try this.
I love the green look of your blog.
Some how blue twitter is looking good for you but it is looking out of character with my theme unfortunately.
I am trying hard to make it better looking.

These sound delicious. I haven't had breakfast so I am starving!! Hope you have a great weekend. (Stopping by from MBC)
Sneak a little protein powder in there and skip the nuts and my kids will have a healthy breakfast and not even know was good for them...now if I could coordinate the ripened bananas with my urge to bake.
Ooh, those sound so good! I'm taking care of my little niece for a couple of weeks and I may have to whip these up while she's here. (I have a bunch of homemade banana peanut butter muffins in the freezer but Lily hasn't been introduced to peanut butter yet). If you want that recipe, feel free to visit my family blog... there's a link on the left under Favorite Recipes. I tried to insert the link here but it's not letting me for some reason!
